How to Make It

  1. Prepare the bacon and fillings: Cook the bacon in a skillet over medium heat until crispy. Remove the cooked bacon and drain the excess grease on paper towels. Once cool, crumble the bacon into small pieces. If using optional vegetables like onions or peppers, cook them in the same pan with a little residual bacon fat until tender, then set aside.
  2. Whisk the eggs: In a small bowl, vigorously whisk the eggs with a pinch of salt and pepper. You can add a tablespoon of water or milk for a fluffier texture, as some recipes suggest.
  3. Cook the omelette: Heat a non-stick pan over medium-low heat and melt the butter, swirling it to coat the pan evenly.
  4. Add eggs to pan: Pour the egg mixture into the pan. Let the eggs sit for a few seconds to set on the bottom.
  5. Form the omelette: With a silicone spatula, gently pull the cooked edges of the egg toward the center, tilting the pan so that the uncooked liquid egg flows underneath to the edges. Repeat this process around the pan until most of the raw egg is set but the top still looks slightly wet.
  6. Add fillings and fold: Sprinkle the crumbled bacon and shredded cheese over one half of the omelette. If using other fillings, add them now.
  7. Finish and serve: Fold the unfilled half of the omelette over the filling using the spatula. Turn off the heat and let it sit for a minute to allow the cheese to melt with the residual heat. Slide the finished omelette onto a plate and serve immediately.
